Spicy Steak Noodles with Egg
Tender, juicy steak tossed with chewy noodles, spicy sauce, and a perfectly cooked egg on top — a quick comfort meal that hits all the flavor notes.
Ingredients (Serves 2–3)
For the steak
300 g beef steak (sirloin, ribeye, or flank), thinly sliced
1 tablespoon soy sauce
1 teaspoon cornstarch
1 teaspoon sesame oil
½ teaspoon black pepper
For the noodles
200 g egg noodles or rice noodles
2 tablespoons vegetable oil
2 cloves garlic, minced
1 small onion, sliced
1 red bell pepper, sliced
1 carrot, julienned
2–3 spring onions, chopped
For the spicy sauce
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon chili paste (adjust to taste)
1 teaspoon sugar
2 tablespoons water
For topping
2 eggs (fried or soft-boiled)
Sesame seeds (optional)
Fresh cilantro or spring onions (optional)
Instructions
1. Marinate the steak
In a bowl, mix soy sauce, cornstarch, sesame oil, and pepper.
Add the sliced steak, toss to coat, and let marinate for 10–15 minutes.
2. Cook the noodles
Boil noodles according to package instructions.
Drain and set aside. Toss lightly with a teaspoon of oil to prevent sticking.
3. Make the spicy sauce
In a small bowl, mix soy sauce, oyster sauce, chili paste, sugar, and water.
Stir until sugar dissolves. Adjust chili to your preferred heat level.
4. Stir-fry the veggies and steak
Heat vegetable oil in a large pan or wok over high heat.
Add garlic and onion, stir-fry for 1 minute.
Add bell pepper and carrot, cook 2–3 minutes until slightly tender but still crisp.
Push veggies to the side, add the steak slices, and stir-fry until just cooked (~2–3 minutes).
Pour in the spicy sauce and toss everything together.
5. Combine noodles
Add cooked noodles to the pan.
Toss well until noodles are fully coated with the sauce and heated through.
6. Cook the eggs
Fry or soft-boil the eggs separately.
Place one egg on top of each serving of noodles.
Serving
Sprinkle sesame seeds and fresh cilantro or spring onions on top.
Serve hot with extra chili paste on the side if you like more heat.
Tip: For a creamier version, drizzle a little sesame paste or peanut butter into the sauce before tossing the noodles.
