Ingredients (Serves 6)

1 1/2 pounds ground beef (80–90% lean)

1 large head cauliflower, cut into small florets (about 6–7 cups)

1 (10.5-ounce) can condensed cream of mushroom soup

2 cups shredded cheddar cheese, divided

1 teaspoon salt (optional, to taste)

1/2 teaspoon black pepper (optional, to taste)

Nonstick cooking spray or 1 teaspoon oil

Instructions

Preheat & Prep

Preheat your oven to 375°F (190°C). Lightly grease a large oven-safe skillet or baking dish with cooking spray or a bit of oil.

Cook the Beef

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart as it cooks. Drain any excess fat if needed. Season with salt and pepper.

 

 

 

 

Soften the Cauliflower

While the beef cooks, steam or microwave the cauliflower florets for 4–5 minutes until just tender but not mushy. Drain well.

Combine Everything

Add the cauliflower to the cooked beef. Stir in the condensed cream of mushroom soup and half of the shredded cheese. Mix until everything is evenly coated and combined.

Assemble the Casserole

Transfer the mixture to your prepared baking dish (if not already using an oven-safe skillet). Spread it out evenly, then sprinkle the remaining cheese over the top.

Bake Until Golden
