This oven-baked pot roast and noodle casserole is the kind of comforting dish that turns a simple meal into something memorable. Oven-Baked 5-Ingredient Pot Roast & Noodle Casserole

Servings: 6

Ingredients:

1.2–1.5 kg (2.5–3 lb) beef chuck roast

1 packet onion soup mix

2 cups beef broth

250 g (8 oz) wide egg noodles

1 cup sour cream

 

 

 

Instructions:

Preheat the oven to 160°C (325°F).

Prepare the roast: Place the beef chuck roast in a large baking dish or Dutch oven. Sprinkle the onion soup mix evenly over the meat, then pour in the beef broth.

Cover and bake for 3–4 hours, or until the beef is fork-tender and easily shreds.

Cook the noodles: About 20 minutes before the roast is done, boil the egg noodles according to package instructions. Drain and set aside.

Shred the beef: Remove the roast from the oven and use two forks to shred the meat directly in the cooking liquid.

Make it creamy: Stir in the sour cream until the sauce becomes smooth and creamy.

Combine: Add the cooked noodles to the beef mixture and gently toss until everything is well coated.

Optional bake: For a slightly golden top, transfer everything to a casserole dish and bake uncovered for an additional 10–15 minutes.
