Ingredients

3–4 lb (1.4–1.8 kg) top round beef roast, at room temperature

1½ teaspoons fine sea salt

1 tablespoon minced garlic

1 teaspoon freshly ground black pepper

1 teaspoon onion powder

1 teaspoon dried rosemary

1 teaspoon dried thyme

2 tablespoons olive oil

For the Gravy

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups beef broth

Pan drippings from the roast

1 teaspoon Worcestershire sauce

Salt and pepper, to taste

 

 

 

 

Instructions

1. Prepare the Roast

Preheat your oven to 450°F (230°C).

Pat the roast dry with paper towels.

In a small bowl, combine the salt, garlic, black pepper, onion powder, rosemary, thyme, and olive oil.

2. Roast the Beef
