Ultimate Shepherd’s Pie Stuffed Baked Potatoes

Ingredients

For the Baked Potatoes:

4 large russet potatoes

1 tablespoon olive oil

Salt, to taste

For the Filling:

1 lb (450 g) ground beef

1 small onion, finely diced

2 cloves garlic, minced

1 cup frozen peas and carrots

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 cup beef broth

1 tablespoon all-purpose flour

½ teaspoon dried thyme

Salt and black pepper, to taste

For the Topping:

2 cups mashed potatoes (prepared)

1 cup shredded cheddar cheese

2 tablespoons chopped fresh parsley (optional)

 

 

 

 

Instructions

Bake the Potatoes

Preheat your oven to 400°F (200°C).

Rub the potatoes with olive oil and sprinkle with salt.

Place on a baking sheet and bake for 50–60 minutes, or until fork-tender.

Prepare the Beef Filling

In a large skillet over medium heat, cook the ground beef until browned.

Add the onion and garlic and sauté for 3–4 minutes until softened.

Stir in the flour and tomato paste, cooking for 1 minute.

Add Worcestershire sauce, thyme, and beef broth, stirring well.

Mix in the peas and carrots and simmer for 5–7 minutes until the gravy thickens.

Season with salt and pepper to taste.

Stuff the Potatoes

Allow the baked potatoes to cool slightly.

Slice each potato lengthwise and carefully scoop out some of the flesh, leaving a sturdy shell.

Fill each potato generously with the beef and vegetable mixture.

Add the Topping

Spoon or pipe the mashed potatoes over the filling.

Sprinkle with shredded cheddar cheese.

Bake Again

Return the stuffed potatoes to the oven and bake for 15–20 minutes, or until the cheese is melted and bubbly.

For extra color, broil for 2–3 minutes until lightly golden.

Serve

Garnish with fresh parsley if desired.
