Ingredients
1 lb (450 g) ground beef
1 medium onion, diced
3 cloves garlic, minced
4 medium potatoes, peeled and cubed
1 can (15 oz / 425 g) kidney beans, drained and rinsed
1 can (14.5 oz / 410 g) diced tomatoes
1 can (8 oz / 225 g) tomato sauce
2 cups (480 ml) beef broth
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon dried oregano
½ teaspoon black pepper
1 teaspoon salt (or to taste)
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
Add the diced onion and garlic to the skillet and cook for 2–3 minutes until fragrant.
Transfer the beef mixture to the slow cooker.
Add the potatoes, kidney beans, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, paprika, chili powder, oregano, salt, and black pepper.
Stir everything together until well combined.
Cover and cook on Low for 6–8 hours or High for 3–4 hours, until the potatoes are fork-tender and the flavors have blended beautifully.
