Ingredients

500 g (about 1 lb) fresh or frozen grated cassava, thawed if frozen

1 cup coconut milk

1 can (14 oz / 400 g) sweetened condensed milk

2 eggs

1/4 cup melted butter

1/2 cup sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

For the Topping (Optional but Recommended):

1/2 cup coconut milk

1/4 cup sweetened condensed milk

 

 

 

Instructions

Preheat your oven to 350°F (175°C). Grease an 8-inch baking dish or line it with parchment paper.

Add the coconut milk, condensed milk, eggs, melted butter, sugar, vanilla extract, and salt to a blender. Blend until smooth.

Transfer the mixture to a large bowl and stir in the grated cassava until well combined.

Pour the batter into the prepared baking dish and spread it evenly.

Bake for 45–55 minutes, or until the cake is set and lightly golden on top.

While the cake is baking, mix the topping ingredients in a small bowl.

Remove the cake from the oven and spread the topping evenly over the surface.

Return the cake to the oven and bake for an additional 10–15 minutes, or until the topping is lightly golden and slightly caramelized.

Allow the cake to cool completely before slicing. This helps the texture become extra creamy and firm.

Serving Suggestions

Serve chilled or at room temperature with a cup of coffee or tea. For an extra-special touch, sprinkle toasted coconut flakes on top before serving.
