These soft and protein-packed blueberry pancakes are the perfect healthy breakfast for busy mornings. Made with creamy cottage cheese, hearty oats, and juicy fresh blueberries, they’re naturally satisfying, lightly sweet, and incredibly fluffy. Enjoy them warm with a drizzle of honey, maple syrup, or a sprinkle of powdered sugar for a cozy homemade treat.

Ingredients

1 cup cottage cheese

1/2 cup rolled oats

2 large eggs

1/2 cup fresh blueberries

1 tsp baking powder

1 tsp vanilla extract

1 tbsp honey or maple syrup (optional)

Pinch of salt

Butter or oil for cooking

 

 

 

Instructions

Add the cottage cheese, rolled oats, eggs, baking powder, vanilla extract, honey, and salt to a blender. Blend until the batter becomes smooth and creamy.

Let the batter rest for 5 minutes so the oats can soften slightly.

Gently fold the fresh blueberries into the batter.

Heat a lightly greased nonstick skillet or pan over medium heat.

Pour small portions of batter onto the skillet and cook for 2–3 minutes until bubbles appear on the surface. Flip carefully and cook for another 1–2 minutes until golden brown.

Serve warm with extra blueberries, maple syrup, yogurt, or your favorite toppings.

Tips

For extra flavor, add a pinch of cinnamon or lemon zest.

Frozen blueberries work too—just add them directly without thawing.

These pancakes are great for meal prep and can be stored in the fridge for up to 3 days.
