Crispy Potato & Egg Skillet Bake

Better than any meat dish you’ve tried — this comforting potato and egg recipe is crispy on the outside, soft and flavorful inside, and incredibly satisfying. Ingredients

4 medium potatoes, peeled and diced

4 eggs

1 onion, finely chopped

2 cloves garlic, minced

1 small bell pepper, chopped

1 tomato, diced

100 g mozzarella cheese, shredded

2 tbsp olive oil

Salt, to taste

Black pepper, to taste

1 tsp paprika

Fresh parsley, chopped

 

 

 

 

Instructions

Cook the potatoes

Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook until golden and crispy on the outside while soft inside.

Add the vegetables

Stir in the onion, garlic, and bell pepper. Cook for 3–4 minutes until fragrant and tender. Add the tomato and season with salt, pepper, and paprika.

Prepare the eggs

In a bowl, whisk the eggs well. Pour them evenly over the potato mixture.

Add the cheese

Sprinkle mozzarella cheese on top and cover the skillet with a lid. Cook on low heat until the eggs are fully set and the cheese is melted.

Serve

Garnish with fresh parsley and serve hot. Perfect with fresh bread, salad, or your favorite sauce.
