Ingredients
1 lb ground beef
1 small onion, chopped
3 potatoes, peeled and diced
3 carrots, sliced
2 celery stalks, chopped
3 cups beef broth
1 can diced tomatoes
1 cup tomato sauce
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and black pepper, to taste
1 cup frozen corn (optional)
Fresh parsley for garnish
Instructions
In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
Add the beef to the slow cooker along with potatoes, carrots, celery, and onion.
Pour in the beef broth, diced tomatoes, and tomato sauce.
Season with garlic powder, Italian seasoning, salt, and pepper. Stir well.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the vegetables are tender.
Stir in the corn during the last 30 minutes of cooking if using.
Serve hot, garnished with fresh parsley and enjoy with warm bread or crackers
