Ingredients

10 large eggs

¼ cup milk

1 cup shredded cheddar cheese

1 cup cooked ham, diced

½ cup red bell pepper, finely diced

¼ cup onion, finely chopped

½ cup spinach, chopped

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon garlic powder (optional)

Nonstick cooking spray or a little oil

 

 

 

Instructions

Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.

In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until smooth.

Stir in the diced ham, bell pepper, onion, spinach, and shredded cheddar cheese.

Evenly divide the mixture among the prepared muffin cups, filling each about ¾ full.

Bake for 18–22 minutes, or until the egg muffins are puffed up, golden, and set in the center.

Allow them to cool for 5 minutes before carefully removing from the muffin tin.
