Slow Cooker Onion Gravy Pot Roast Delight

Ingredients

3–4 lb (1.4–1.8 kg) beef chuck roast

1½ lbs baby potatoes, halved

2 large sweet onions, sliced

1 packet onion soup mix

2 cups beef broth

2 tbsp Worcestershire sauce

2 tbsp tomato paste

2 tbsp cornstarch

3 tbsp water

1 tsp garlic powder

1 tsp dried thyme

Salt and black pepper, to taste

2 tbsp olive oil

Instructions

Season the chuck roast generously with salt, pepper, garlic powder, and thyme.

Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until nicely browned.

Place the potatoes and sliced onions in the bottom of the slow cooker.

In a bowl, whisk together the beef broth, onion soup mix, Worcestershire sauce, and tomato paste.

Set the roast on top of the vegetables and pour the broth mixture over everything.

Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the beef is fork-tender.

Remove the roast and vegetables and keep warm.

Mix the cornstarch and water to create a slurry. Stir it into the cooking liquid and cook for 5–10 minutes until the gravy thickens.

Slice or shred the roast and serve with the potatoes, onions, and plenty of rich onion gravy.
