Volcano Sweet Potato Skillet

15 min prep + 40 min cook | Serves 6

 

 

 

Benefits:

2. *Protein + Calcium*: Feta + cream cheese = muscle + bone support

3. *Good fats*: Olive oil + pistachios = heart healthy + keeps you full longer

 

Ingredients:

*Volcano*: 1.2kg sweet potato wedges, 3 tbsp olive oil, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp salt, ½ tsp pepper

*Cream*: 250g feta, 250ml heavy cream, 3 garlic cloves minced, 30g cream cheese, 1 tbsp butter

*Top*: 40g chopped pistachios, thyme, chili flakes, flaky salt

 

 

 

 

Prep – 4 steps only

*Roast*: 220°C / 425°F. Toss wedges with oil + spices. Roast 35-40 min till crispy

*Stack*: Pile wedges high in cast-iron skillet = volcano shape

*Cream*: Butter + garlic 1 min → add cream + cheeses → whisk till silky

*Serve*: Pour hot cream over volcano at table. Top with pistachios + thyme

 

Crispy outside, creamy inside. Done
