Blueberry Cottage Cheese Pancake Bites

Ingredients

1 cup cottage cheese (full-fat or low-fat)

2 large eggs

½ ripe banana, mashed well

½ cup oat flour

(or almond flour for lower-carb option)

1 tablespoon honey or maple syrup (optional, for sweetness)

1 teaspoon vanilla extract

1 teaspoon baking powder

Pinch of salt

½ cup blueberries (fresh or frozen)

Optional Add-Ins

½ tsp cinnamon

1 tbsp chia seeds or ground flaxseed

Lemon zest (½ tsp) for extra brightness

 

 

 

Instructions

Step 1: Blend the Batter

Add cottage cheese, eggs, mashed banana, honey, and vanilla to a blender or food processor.

Blend until smooth and creamy (no visible curds).

Step 2: Mix Dry Ingredients

Pour the blended mixture into a bowl.

Gently whisk in:

Oat flour

Baking powder

Salt

Optional cinnamon or seeds

Step 3: Fold in Blueberries

Carefully fold in blueberries so they don’t burst.

Cooking Methods

Air Fryer Method (Best for Crisp Edges)

Preheat air fryer to 350°F (175°C).

Lightly grease silicone mini muffin cups or the air fryer basket.

Spoon batter into molds, filling ¾ full.

Air fry for 8–10 minutes, until:

Tops are set

Toothpick comes out clean

Cool for 5 minutes before removing.

Oven Method

Preheat oven to 375°F (190°C).

Grease a mini muffin pan or line with silicone cups.

Fill each cavity ¾ full.

Bake for 12–15 minutes, until lightly golden and springy.

Let cool slightly before serving.
