INGREDIENTS:
Buttery Cookie Base
1 cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 tbsp lemon zest
2 tbsp fresh lemon juice
2 cups all-purpose flour
½ tsp baking powder
¼ tsp salt
Lemon Glaze
1 ½ cups powdered sugar
2–3 tbsp fresh lemon juice
1 tsp lemon zest
The base is soft and buttery with a delicate crumb, topped with a glossy citrus finish.
INSTRUCTIONS:
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
Cream butter and sugar until light and fluffy.
Add egg, lemon zest, and lemon juice. Mix until smooth.
Whisk flour, baking powder, and salt separately.
Gradually mix dry ingredients into wet mixture until just combined.
Press dough evenly into prepared pan.
Bake 20–25 minutes until lightly golden at the edges.
Cool completely in the pan.
Whisk powdered sugar with lemon juice until thick and glossy.
Spread glaze evenly over cooled bars.
Sprinkle lemon zest on top before glaze sets.
Let glaze firm, then slice into squares.
