Ingredients
1 cup cottage cheese
2 large eggs
2 tablespoons honey butter (softened)
Optional Toppings:
Fresh fruit (berries, banana slices, etc.)
Maple syrup or extra honey
Powdered sugar
Instructions
1. Preheat the Waffle Iron
Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it if needed.
2. Make the Batter
In a medium bowl, combine the cottage cheese, eggs, and honey butter.
Use a whisk or fork to mix until smooth. It’s okay if there are a few small lumps from the cottage cheese—they’ll melt into the waffle as it cooks.
3. Cook the Waffles
Pour the batter into the preheated waffle iron. Use enough to just cover the waffle grid.
Close the waffle iron and cook for 3–5 minutes, or until the waffle is golden brown and set.
Carefully remove the waffle and repeat with the remaining batter.
4. Serve
Slice into squares for easy serving.
Drizzle with additional honey, top with fresh fruit, or dust with powdered sugar.
