Homemade Carrot Bread
Soft, moist, and warmly spiced, this Carrot Bread is the perfect homemade treat for breakfast, dessert, or an afternoon snack. Fresh grated carrots keep the loaf incredibly moist while cinnamon and pumpkin spice add a cozy flavor.
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoons baking soda
1 ½ teaspoons ground cinnamon
1 teaspoon salt
½ teaspoon pumpkin pie spice
2 ½ cups grated carrots
3 large eggs
¾ cup vegetable oil (or canola oil)
Optional add-ins
½ cup chopped walnuts or pecans
½ cup raisins
1 teaspoon vanilla extract
Instructions
Preheat the oven
Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
Mix the dry ingredients
In a large bowl whisk together:
flour
sugar
baking soda
cinnamon
salt
pumpkin pie spice
Prepare the wet ingredients
In another bowl beat the eggs. Add the oil and mix until smooth.
Combine the mixture
Pour the wet mixture into the dry ingredients and stir until just combined.
Add the carrots
Fold in the grated carrots (and nuts or raisins if using).
Fill the pan
Pour the batter into the prepared loaf pan and spread evenly.
Bake
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool
Let the bread cool in the pan for 10–15 minutes, then transfer to a rack to cool completely before slicing.
Optional Simple Glaze (Highly Recommended)
Mix together:
1 cup powdered sugar
1–2 tablespoons milk
½ teaspoon vanilla
Drizzle over the cooled bread.

Use freshly grated carrots for the best moisture and flavor.
Do not overmix the batter to keep the bread soft.
Store covered at room temperature for 2–3 days or refrigerate up to 1 week.
