2 tablespoons butter
2 large onions, thinly sliced
1 teaspoon sugar
1½ pounds ground beef
½ pound ground pork
1 cup breadcrumbs
2 eggs
¼ cup milk
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
1 cup shredded Swiss cheese
Directions
Preheat the oven
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper for easier cleanup.
Caramelize the onions
In a large skillet, melt the butter over medium heat. Add the sliced onions and sugar. Cook slowly, stirring occasionally, for about 20 minutes, until the onions become soft, golden brown, and caramelized. Remove from heat and allow them to cool slightly.
Prepare the meat mixture
In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, milk, Worcestershire sauce, salt, black pepper, and dried thyme. Mix gently with your hands or a spoon until just combined. Avoid overmixing so the meatloaf stays tender.
Add the onions
Fold most of the caramelized onions into the meat mixture, reserving a small portion to place on top later.
Shape the meatloaf
Transfer the meat mixture to the prepared loaf pan and gently press it down to form an even loaf.

Spread the reserved caramelized onions over the top of the meatloaf. Sprinkle the shredded Swiss cheese evenly across the surface.
Bake
