Strawberry Salad with Honey Vinaigrette

Ingredients

Salad:

5–6 cups salad greens (spring mix or spinach)

1½–2 cups fresh strawberries, sliced

½ small red onion, thinly sliced

½ cup feta cheese, crumbled (optional for vegan)

½ cup almonds (sliced or slivered)

 

 

 

Honey Vinaigrette Dressing:

¼ cup olive oil

2 tablespoons red wine vinegar

1–2 tablespoons honey (adjust to taste)

1 teaspoon Dijon mustard

Salt, to taste

Black pepper, to taste

Instructions

1. Toast the almonds (recommended )

Heat a dry pan over medium heat

Add almonds and toast for 3–5 minutes

Stir frequently until golden and fragrant

Remove and let cool

2. Prepare the dressing

In a small bowl or jar:

Add olive oil, red wine vinegar, honey, and Dijon mustard

Season with salt and pepper

Whisk or shake well until smooth and slightly thick

3. Assemble the salad

In a large bowl:

Add salad greens

Top with sliced strawberries

Add red onion slices

Sprinkle toasted almonds

Add crumbled feta cheese

4. Toss and serve

Drizzle dressing over the salad just before serving

Toss gently to combine

Serve immediately for best freshness

Add grilled chicken for a full meal

Pair with crusty bread

Serve alongside light pasta dishes

Tips:

Soak red onions in cold water for 5 minutes to reduce sharpness

Use ripe, sweet strawberries for the best flavor

Add avocado slices for extra creaminess

Swap almonds with walnuts or pecans if you like

Vegan Option:

Skip feta or replace with plant-based cheese

Use maple syrup instead of honey
