Ingredients:

3 large cucumbers, thinly sliced

1 small red onion, thinly sliced

1/4 cup fresh dill, finely chopped

1/4 cup fresh parsley, finely chopped

For the dressing:

1/4 cup apple cider vinegar

2 tablespoons olive oil

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon Dijon mustard

Salt and black pepper, to taste

Optional toppings (for extra flavor & protein):

Crumbled feta cheese

Cherry tomatoes, halved

Thinly sliced radishes

Toasted pine nuts

Instructions:

Slice the vegetables:

Wash and dry the cucumbers, then slice them thinly into rounds. Place them in a large mixing bowl.

Add the onion:

Thinly slice the red onion into half-moons and add it to the cucumbers.

Mix in fresh herbs:

Finely chop the dill and parsley, then sprinkle them into the bowl for a fresh, vibrant flavor.

Prepare the dressing:

In a small bowl, whisk together the apple cider vinegar, olive oil, honey (or maple syrup), Dijon mustard, salt, and pepper until well combined.

Combine everything:
