Ingredients (Serves 6–8)

4 cups fresh or frozen blackberries

1 cup sugar (plus 2 tablespoons for topping)

1 tablespoon lemon juice

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup (115g) unsalted butter, melted

Instructions

Preheat the oven to 375°F (190°C).

In a bowl, combine the blackberries, sugar, and lemon juice. Gently toss and set aside to release their juices.

In another bowl, whisk together the flour, baking powder, salt, and remaining sugar.

Stir in the milk until a smooth batter forms.

Pour the melted butter into a baking dish, then pour the batter over the butter—do not stir.

Spoon the blackberry mixture evenly over the batter. Again, do not mix; the layers will form naturally as it bakes.

Sprinkle the remaining 2 tablespoons of sugar over the top.

Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbling.

Let cool slightly before serving.
