Ultimate Cheesy Chili Mac Bake (Hearty, Spicy & Comforting)

 

 

 

Ingredients:

2 cups cooked elbow macaroni

1 lb (450 g) ground beef

1 can kidney beans, drained and rinsed

1 can diced tomatoes (or tomato sauce)

1/2 cup additional tomato sauce

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon cumin (optional)

Salt and black pepper, to taste

 

 

 

Instructions:

Preheat the oven to 180°C (350°F) and lightly grease a baking dish.

Cook the beef: In a large skillet over medium heat, warm the olive oil. Add the chopped onion and cook until soft, about 3–4 minutes. Stir in the garlic and cook for another minute. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.

Build the chili base: Stir in the kidney beans, diced tomatoes, and tomato sauce. Season with chili powder, paprika, cumin, salt, and pepper. Let the mixture simmer for 8–10 minutes until slightly thickened and flavorful.

Combine with pasta: Add the cooked macaroni to the skillet and mix until everything is well coated in the rich chili sauce.

Assemble the casserole: Transfer the mixture into the prepared baking dish. Sprinkle cheddar and mozzarella evenly over the top.

Bake: Place in the oven and bake for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.

 

 

 

Serve hot: Let it rest for a few minutes before serving. Garnish with chopped parsley or green onions if desired.

Tip: For an extra kick, add a pinch of red pepper flakes or a few slices of jalapeño before baking!
