Mediterranean Roasted Red Pepper & Mozzarella Stuffed Chicken
This juicy baked chicken is filled with smoky roasted red peppers and melty mozzarella, then finished with a golden, flavorful crust. Simple ingredients, but a restaurant-style result.
Ingredients:
4 boneless, skinless chicken breasts
1 cup roasted red peppers, chopped
1 cup mozzarella cheese, shredded
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt and black pepper, to taste
Toothpicks (to secure stuffing)
Instructions:
Prepare the chicken
Preheat your oven to 200°C (400°F). Slice a pocket into each chicken breast without cutting all the way through.
Make the filling
In a bowl, mix roasted red peppers with mozzarella cheese.
Stuff the chicken
Fill each chicken breast with the pepper-cheese mixture and secure with toothpicks.
Season well
Rub the chicken with olive oil, garlic, oregano, paprika, salt, and black pepper.
Bake
Place in a baking dish and bake for 25–30 minutes, or until the chicken is fully cooked and the cheese is melted and bubbling.
