Ingredients
12 ounces egg noodles (or your favorite pasta)
1 pound ground beef
1 small onion, finely chopped
2 garlic cloves, minced
1 can (14.5 ounces) diced tomatoes, drained
1 cup tomato sauce
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt and freshly ground black pepper, to taste
1 cup sour cream
4 ounces cream cheese, softened
2 cups shredded cheddar cheese, divided
1 cup shredded mozzarella cheese
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. Cook the noodles
Bring a large pot of salted water to a boil. Cook the egg noodles until just al dente according to package directions. Drain well and return them to the pot.
3. Prepare the beef sauce
In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up as it cooks. Drain excess grease if needed. Add the chopped onion and cook for 3 to 4 minutes, until softened. Stir in the garlic and cook for another 30 seconds until fragrant.
4. Simmer the sauce
Add the drained diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Stir well and let the mixture simmer for 8 to 10 minutes, allowing the flavors to meld.
5. Make the creamy noodle mixture
In a medium bowl, beat together the sour cream and softened cream cheese until smooth and creamy. Fold this mixture into the cooked noodles until evenly coated.
6. Assemble the casserole
Spread half of the creamy noodles into the prepared baking dish. Top with half of the beef mixture, then sprinkle with 1 cup of cheddar cheese and half of the mozzarella.
Repeat the layers with the remaining noodles, beef sauce, and the rest of the cheeses.
7. Bake to perfection
Bake uncovered for 20 to 25 minutes, or until the cheese is melted, bubbly, and lightly golden around the edges.
8. Rest and garnish
Let the casserole rest for 5 to 10 minutes before serving. Sprinkle with fresh parsley for a pop of color and freshness.
