Cheesy Mexican Taco Casserole Bake

 

 

A bold, comforting casserole loaded with seasoned beef, black beans, sweet corn, and layers of melted cheese. This easy family favorite brings all the delicious flavors of taco night into one hearty, oven-baked dish that’s perfect for busy weeknights or casual gatherings.

Ingredients

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning

1/2 cup water

1 can (15 ounces) black beans, drained and rinsed

1 cup corn kernels (canned, drained, or frozen)

1 cup salsa

2 cups shredded Mexican cheese blend, divided

1 cup sour cream

8 small flour tortillas, cut into wedges

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh cilantro, chopped (optional)

Sliced green onions, for garnish

Diced tomatoes, for garnish

Sliced jalapeños, for garnish (optional)

 

 

 

 

Instructions

Preheat the oven

Preheat your oven to 375°F (190°C).

Lightly grease a 9×13-inch baking dish.

Cook the beef mixture

Heat olive oil in a large skillet over medium heat.

Add the chopped onion and cook for 2–3 minutes until softened.

Stir in the garlic and cook for 30 seconds until fragrant.

Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.

Season the filling

Sprinkle in the taco seasoning and pour in the water.

Stir well and simmer for 2 minutes.

Add the black beans, corn, and salsa. Mix until combined and heated through.

Season with salt and black pepper to taste.

Assemble the casserole

Spread a thin layer of the beef mixture in the prepared baking dish.

Arrange half of the tortilla wedges over the beef.

Spread half of the remaining beef mixture on top.

Dollop half of the sour cream over the layer.

Sprinkle with 1 cup of shredded cheese.

Repeat the layers with the remaining tortillas, beef mixture, sour cream, and cheese.

Bake

Cover with foil and bake for 20 minutes.

Remove the foil and bake for an additional 10–15 minutes, or until the cheese is melted, bubbly, and lightly golden.

Garnish and serve

Let the casserole rest for 5 minutes before serving.

Top with fresh cilantro, green onions, diced tomatoes, and jalapeños if desired.
