Ingredients
1 lb large shrimp, peeled and deveined
3 ears corn, cut into halves or thirds
4 tbsp unsalted butter, melted
4 cloves garlic, minced
1 tsp paprika
1 tsp Italian seasoning
Salt and black pepper, to taste
1 tbsp fresh lemon juice
1 tbsp chopped fresh parsley
Lemon wedges, for serving
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking tray or line it with parchment paper.
In a small bowl, combine the melted butter, garlic, paprika, Italian seasoning, lemon juice, salt, and black pepper.
Arrange the corn pieces on the tray and brush them with part of the garlic butter mixture.
Add the shrimp to the tray and drizzle the remaining garlic butter sauce over everything. Toss gently to coat.
Bake for 12–15 minutes, or until the shrimp turn pink and opaque and the corn becomes tender.
Remove from the oven and sprinkle with fresh parsley.
Serve hot with lemon wedges and enjoy with crusty bread, rice, or a fresh salad.
Tips
Add smoked sausage or baby potatoes for a heartier meal.
Sprinkle chili flakes for a spicy kick.
Fresh shrimp gives the best flavor, but frozen shrimp works well too after thawing.
Serving Suggestion
Pair this buttery shrimp and corn tray bake with iced tea, roasted vegetables, or creamy mashed potatoes for a complete and satisfying dinner.
