Golden, fluffy, and wonderfully buttery, these homemade milk brioche rolls are the perfect addition to any breakfast or dinner table. Ingredients
4 cups all-purpose flour
2 large eggs, room temperature
1 cup whole milk, warmed to about 110°F (43°C)
¼ cup granulated sugar
2¼ teaspoons active dry yeast
1 teaspoon salt
¼ cup unsalted butter, softened
1 egg yolk + 1 tablespoon milk (for egg wash)
Optional: sesame seeds or flaky sea salt for topping
Instructions
Activate the Yeast
In a large bowl, combine the warm milk, sugar, and yeast. Let it sit for 5–10 minutes until frothy.
Prepare the Dough
Add the eggs and softened butter, then mix well. Gradually add the flour and salt, stirring until a soft dough forms.
Knead Until Smooth
Knead the dough for 8–10 minutes until smooth, elastic, and slightly tacky. If needed, add a little more flour, one tablespoon at a time.
First Rise
Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about 1–1½ hours, or until doubled in size.
Shape the Rolls
Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and place them in a greased baking dish or on a lined baking sheet.
Second Rise
Cover the rolls loosely and let them rise again for 30–45 minutes until puffy.
Bake to Golden Perfection
Preheat the oven to 375°F (190°C). Brush the tops with the egg wash and sprinkle with sesame seeds if desired. Bake for 18–22 minutes, or until beautifully golden brown.
Serve Warm
Let the rolls cool slightly before serving. Enjoy soft and warm straight from the oven.
