Crispy Golden Potato & Egg Skillet Bake

A comforting meatless dinner that’s crispy on the outside, soft on the inside, and perfect for surprising your guests.

 

 

 

Ingredients

5 eggs

Salt, to taste

220 g all-purpose flour

4 medium potatoes, peeled and grated

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp black pepper

1 tsp paprika

2 tbsp chopped parsley

100 g shredded mozzarella or cheddar cheese

3 tbsp olive oil or butter for frying

 

 

 

Instructions

Prepare the potatoes

Grate the potatoes and squeeze out as much excess liquid as possible using a clean kitchen towel.

Mix the batter

In a large bowl, whisk the eggs with salt, black pepper, and paprika. Add the flour gradually and mix until smooth.

Add the vegetables

Stir in the grated potatoes, onion, garlic, parsley, and cheese. Mix well until everything is evenly combined.

Cook until golden

Heat olive oil or butter in a large skillet over medium heat. Spread the potato mixture evenly in the pan like a thick pancake.

Flip carefully

Cook for 6–8 minutes until the bottom is crispy and golden brown. Carefully flip and cook the other side for another 5–7 minutes.

 

 

 

Serve hot

Slice and serve warm with sour cream, yogurt sauce, or a fresh salad.
