Ingredients
1 cup cottage cheese
2 large eggs
½ cup almond flour (or rolled oats for a heartier texture)
1 tsp ground cinnamon
1 tsp vanilla extract
2–3 tbsp honey or maple syrup (optional)
½ tsp baking powder
Pinch of salt
1 medium apple, peeled and finely chopped
Instructions
1. Preheat Oven
Preheat your oven to 350°F (175°C).
Lightly grease 2 small oven-safe bowls or ramekins.
2. Prepare the Batter
In a medium bowl, whisk together cottage cheese, eggs, vanilla extract, and honey/maple syrup until smooth.
In a separate bowl, combine almond flour, cinnamon, baking powder, and salt.
Fold the dry ingredients into the wet mixture gently.
Stir in the chopped apple until evenly distributed.
3. Bake
Divide the mixture evenly between prepared bowls.
Bake for 25–30 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
4. Serve
Serve warm, optionally drizzled with extra honey or maple syrup.
Top with additional cinnamon, chopped nuts, or a dollop of yogurt if desired.
Tips
Use sweet, crisp apples like Honeycrisp or Fuji for best flavor.
Almond flour keeps it low-carb; rolled oats make it more filling and hearty.
These bowls can be prepped the night before and baked fresh in the morning.
