Cheddar-Stuffed Meatloaf Muffins
A fun twist on classic meatloaf—these individual muffins are juicy, flavorful, and filled with a gooey cheddar center. Perfect for busy weeknights or meal prep!
Ingredients:
1 lb ground beef (or ground turkey)
1 cup breadcrumbs
1 egg
1/2 cup ketchup
1 cup shredded cheddar cheese (or your favorite melting cheese)
1 tsp garlic powder
Optional: finely chopped onions or bell peppers
Instructions:
1. Preheat & Prep
Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with non-stick spray.
2. Mix the Meatloaf
In a large bowl, combine ground beef, breadcrumbs, egg, ketchup, and garlic powder.
Add chopped onions or peppers if using.
Mix gently until just combined—do not overmix.
3. Build the Base
Scoop the meat mixture into each muffin cup, filling them about halfway. Press a small indent into the center of each.
4. Add the Cheese
Place a spoonful of shredded cheddar cheese into the center of each indent.
5. Seal the Muffins
Top with more meat mixture and press the edges gently to fully seal the cheese inside.
6. Bake
Bake for 20–25 minutes, or until fully cooked through and no longer pink in the center.
7. Cool & Serve
Let them rest for a few minutes before removing from the pan so they hold their shape.
