Cheesy Beef & Broccoli Foil Packs

Cheesy Beef & Broccoli Foil Packs
Craving something low effort but seriously satisfying? These foil-pack dinners are the ultimate comfort meal—tender beef, hearty veggies, and that rich, melty cheese finish. Everything cooks together in one packet, locking in flavor and keeping cleanup almost nonexistent.
Servings: 2–3
Ingredients:
400–500 g beef stew meat (or steak, cut into chunks)
2 cups broccoli florets
2 ears corn on the cob, cut into halves or thirds
2–3 medium potatoes, chopped into small cubes
2–3 tablespoons olive oil or melted butter
Seasoning:
1 teaspoon salt (or to taste)
½–1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon onion powder
Finish:
100–150 g Velveeta cheese (or any melty cheese), cubed or sliced
Instructions:
1. Preheat the Oven
Set your oven to 450°F (230°C).
2. Prep the Ingredients
Cut potatoes into small cubes (this helps them cook fully).
Cut corn into manageable pieces.
If using steak, cut into bite-sized chunks.
3. Season Everything
In a large bowl, combine:
Beef
Potatoes
Broccoli
Corn
Drizzle with olive oil or melted butter.
Add all the seasonings and toss well until everything is evenly coated.
4. Assemble the Foil Packs
Lay out large sheets of aluminum foil.
Divide the mixture evenly between them.
Wrap tightly and seal well so no steam escapes (this is key for tenderness).
5. Bake
Place foil packs on a baking tray and bake for about 55–65 minutes.
If you like your food “done-done,” go the full hour for ultra-tender meat and soft potatoes.
6. Add the Cheese (The Best Part )
Carefully open the foil packs (watch out for steam).
Add the Velveeta cheese on top.
Loosely close the foil again.
7. Final Melt
Return to the oven for 5–7 minutes, until the cheese melts into that smooth, creamy “liquid gold.”
8. Serve
Serve hot прямо from the foil or transfer to a plate. Spoon that cheesy goodness all over everything!
Tips for Success:
Cut potatoes small so they cook evenly.
Steak option: Use steak instead of stew meat and reduce cooking time to ~45–50 minutes.
Extra flavor: Add sliced onions, carrots, or bell peppers.
Crispy finish: Open foil completely for the last 5 minutes if you want a slight roast effect.
Why You’ll Love It:
One-pan (well… foil!) meal
Minimal cleanup
Rich, cheesy, and filling
Perfect for busy nights or lazy cooking days
