Quick & Easy Foil-Pack Beef & Veggie Bake

Quick & Easy Foil-Pack Beef & Veggie Bake
This is a simple, hearty, all-in-one meal—everything cooks together in foil, and the melted cheese at the end makes it extra comforting.
Servings: 2–3
Ingredients:
400–500 g beef stew meat (or steak, cut into chunks)
2 cups broccoli florets
2 ears corn on the cob, cut into halves or thirds
2–3 medium potatoes, chopped into small cubes
2–3 tablespoons olive oil or melted butter
Salt, to taste
Black pepper, to taste
1 teaspoon garlic powder
1 teaspoon paprika (optional)
½ teaspoon onion powder (optional)
100–150 g Velveeta cheese (or any melty cheese), cubed or sliced
Instructions:
Preheat the oven:
Set your oven to 450°F (230°C).
Prep the ingredients:
Cut the potatoes into small cubes (so they cook faster).
Cut corn into smaller pieces if needed.
If using steak, cut it into bite-sized chunks.
Season everything:
In a large bowl, combine the beef, potatoes, broccoli, and corn.
Drizzle with olive oil or butter, then season with salt, pepper, garlic powder, paprika, and onion powder.
Toss well so everything is evenly coated.
Wrap in foil:
Divide the mixture into portions.
Place each portion on a large sheet of aluminum foil.
Wrap tightly into sealed packets (make sure no steam can escape).
Bake:
Place the foil packets on a baking tray and bake for about 55–65 minutes, depending on how tender you like your meat and potatoes.
(You mentioned you like it “done done,” so closer to 1 hour is perfect.)
Add the cheese:
Carefully open the foil packets (watch out for hot steam).
Add the Velveeta cheese on top, then loosely close the foil again.
Finish baking:
Return to the oven for 5–7 minutes, until the cheese is fully melted and creamy.
Serve:
Serve hot прямо from the foil or transfer to a plate.
Tips:
Cut potatoes small so they cook through properly.
If using steak instead of stew meat, cooking time can be slightly shorter (about 40–50 minutes).
You can add carrots, onions, or bell peppers for extra flavor.
For extra crispiness, open the foil completely for the last 5 minutes.
This is a super flexible, no-fuss meal—perfect when you want something filling with minimal cleanup
