Cheesy Garlic Zucchini Skillet Bake

Ingredients
2 medium zucchinis, sliced
2 eggs
1 onion, finely chopped
3 cloves garlic, minced
1 tomato, diced
Fresh parsley, chopped
100 g mozzarella cheese, shredded
100 g mushrooms, sliced
2 tbsp olive oil
Salt, to taste
Black pepper, to taste
1 tsp paprika or Italian seasoning (optional)
Instructions
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and cook until soft and fragrant. Stir in the garlic and cook for another 30 seconds.
Add the mushrooms and cook until tender. Then add the zucchini slices and season with salt, black pepper, and paprika.
Cook for 6–8 minutes, stirring occasionally, until the zucchini becomes slightly golden and tender.
Add the diced tomato and chopped parsley, then mix everything together.
In a small bowl, beat the eggs and pour them evenly over the zucchini mixture.
Sprinkle the mozzarella cheese on top, cover the skillet, and cook on low heat until the eggs are set and the cheese is perfectly melted.
Serve hot with fresh bread or a light salad.
