Garden Fresh Cheesy Vegetable Bake

Ingredients
2 zucchini, sliced
2 carrots, thinly sliced
1 broccoli head, cut into florets
1 red bell pepper, diced
1 onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
Salt and black pepper to taste
1 teaspoon oregano
1 teaspoon paprika
200 ml cooking cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh parsley for garnish
Instructions
Preheat your oven to 180°C (350°F).
In a large pan, heat olive oil and sauté the onion and garlic until fragrant.
Add the zucchini, carrots, broccoli, and bell pepper. Season with salt, pepper, oregano, and paprika. Cook for 5–7 minutes until slightly tender.
Transfer the vegetables to a baking dish and pour the cooking cream evenly over the top.
Sprinkle mozzarella and Parmesan cheese generously over the vegetables.
Bake for 20–25 minutes, or until the cheese is melted, bubbly, and golden brown.
Garnish with fresh parsley and serve warm.
