This Garlic Herb Prime Rib Roast is the ultimate centerpiece for a special dinner. Ingredients

1 (4–6 lb) prime rib roast (bone-in or boneless)

3 tbsp olive oil

4 cloves garlic, minced

2 tsp kosher salt

1 tsp black pepper

1 tsp fresh rosemary, chopped

1 tsp fresh thyme leaves

1 tsp onion powder

1 tsp smoked paprika

2 tbsp butter, softened

 

 

 

Instructions

Remove the prime rib from the refrigerator about 1 hour before cooking to bring it closer to room temperature.

Preheat your oven to 450°F (230°C).

In a small bowl, mix together the olive oil, garlic, salt, pepper, rosemary, thyme, onion powder, smoked paprika, and butter.

Pat the roast dry with paper towels, then rub the seasoning mixture all over the meat, coating every side evenly.

Place the roast fat-side up in a roasting pan with a rack.

Roast at 450°F (230°C) for 20 minutes to create a flavorful crust.

Reduce the oven temperature to 325°F (165°C) and continue roasting:

Rare: 120–125°F (49–52°C)

Medium-rare: 130–135°F (54–57°C)

Medium: 140–145°F (60–63°C)

 

 

 

Remove the roast from the oven and loosely tent it with foil. Let it rest for 20–30 minutes before slicing to keep the juices locked in.

Slice and serve warm with mashed potatoes, roasted vegetables, or creamy horseradish sauce.
