Ingredients

4 large eggs, separated

120 ml (½ cup) milk

50 g (¼ cup) unsalted butter

80 g (⅔ cup) cake flour or all-purpose flour, sifted

70 g (⅓ cup) granulated sugar

1 teaspoon vanilla extract

½ teaspoon lemon juice or cream of tartar

Pinch of salt

Powdered sugar for dusting (optional)

Instructions

Preheat your oven to 150°C (300°F). Line an 8-inch round cake pan with parchment paper.

In a saucepan, gently heat the milk and butter until the butter melts. Remove from heat and let cool slightly.

Add the sifted flour and mix until smooth.

Stir in the egg yolks and vanilla extract until well combined.

In a separate bowl, beat the egg whites with lemon juice and salt until foamy.

Gradually add the sugar while beating until soft peaks form.

Gently fold the meringue into the yolk mixture in three additions, being careful not to deflate the batter.

Pour the batter into the prepared pan and tap lightly to remove air bubbles.

Place the cake pan in a larger baking tray filled with hot water (water bath method).

Bake for 60–70 minutes, or until the cake is golden and set.

Allow the cake to cool completely before removing it from the pan.

Dust with powdered sugar and serve.
