Ingredients

 

– 1 cup freshly squeezed lemon juice

– 1 cup granulated sugar

1. Prepare the lemons: Wash the lemons well and finely zest them, being careful to avoid the bitter white pith. Then squeeze the lemons until you have 1 cup of fresh lemon juice.

 

2. Make the syrup: Add the water, sugar, and lemon zest to a saucepan. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved.

 

3. Add the lemon juice: Remove the saucepan from the heat and stir in the freshly squeezed lemon juice. If using, add the citric acid and mix well.

 

4. Strain the syrup: Pour the mixture through a fine-mesh strainer to remove the lemon zest and any pulp.

 

5. Cool and store: Allow the lemon syrup to cool completely, then pour it into a clean, airtight glass bottle or jar. Refrigerate until ready to use.
