One-Pan Cheesy Skillet Vegetable Lasagna

This easy skillet lasagna is packed with tender vegetables, rich marinara sauce, perfectly cooked noodles, and plenty of gooey melted cheese. It’s a delicious vegetarian comfort meal that comes together in about 30 minutes, with minimal cleanup and maximum flavor!

 

Ingredients

 

– 1 small onion, finely diced

– 2 cloves garlic, minced

– 1 cup sliced mushrooms

– ½ cup diced carrots

– 1 jar (about 24 oz) marinara sauce

– 1 teaspoon Italian seasoning

– 8 oz lasagna noodles, broken into bite-sized pieces

– 2 cups water or vegetable broth

– 2 cups shredded mozzarella cheese

– ½ cup ricotta cheese, optional

– Salt and black pepper, to taste

– Fresh parsley or basil, for garnish

– 1 tablespoon olive oil

 

 

 

 

Instructions

 

1. Sauté the vegetables:

Heat the olive oil in a large oven-safe skillet over medium heat. Add the onion, garlic, mushrooms, and carrots. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.

 

2. Add the lasagna ingredients:

Stir in the marinara sauce, broken lasagna noodles, water or vegetable broth, Italian seasoning, salt, and pepper. Gently stir everything together.

 

3. Simmer until tender:

Bring the mixture to a gentle simmer. Cover and cook for 12–15 minutes, stirring once or twice, until the noodles are tender and the sauce has thickened.

 

4. Add the cheese:

Spoon dollops of ricotta over the top, then generously sprinkle with shredded mozzarella.

 

5. Melt and brown:

Place the skillet under the broiler for 2–3 minutes, or until the cheese is melted, bubbly, and lightly golden. Keep a close eye on it!

 

6. Garnish and serve:

Sprinkle with fresh parsley or basil, let it cool for a couple of minutes, then serve warm and enjoy!
