Creamy Garlic Butter Tuscan Mushrooms
Rich, creamy, and loaded with garlic, herbs, sun-dried tomatoes, and Parmesan — these Tuscan mushrooms are the perfect side dish or vegetarian main. They’re ready in about 25 minutes and taste like something from a cozy Italian restaurant.
Ingredients (Serves 4)
1 lb (450g) mushrooms (cremini or button), cleaned
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
½ cup sun-dried tomatoes (in oil), drained and chopped
1 teaspoon Italian seasoning
½ teaspoon dried oregano
½ teaspoon red pepper flakes (optional)
1 cup heavy cream
½ cup grated Parmesan cheese
1 cup fresh spinach (optional but recommended)
Salt and black pepper to taste
Fresh parsley or basil for garnish
Instructions
1️⃣ Sauté the Mushrooms
Heat olive oil and butter in a large skillet over medium heat.
Add mushrooms in a single layer.
Cook for 5–7 minutes until browned and tender.
Season lightly with salt and pepper.
2️⃣ Add Garlic & Flavor
Stir in minced garlic and cook 30 seconds until fragrant.
Add sun-dried tomatoes, Italian seasoning, oregano, and red pepper flakes.
Stir and cook for another minute to release the flavors.
3️⃣ Make the Creamy Sauce
Pour in the heavy cream and stir well.
Bring to a gentle simmer (do not boil).
Add Parmesan cheese and stir until melted and smooth.
Let simmer 3–5 minutes until slightly thickened.
4️⃣ Finish the Dish
Stir in fresh spinach and cook until wilted (about 1–2 minutes).
Taste and adjust seasoning with salt and pepper.
Garnish with fresh parsley or basil before serving.
