Ingredients
For the Crust
2 ½ cups all-purpose flour
1 tablespoon sugar
½ teaspoon salt
1 cup cold butter, cubed
6–8 tablespoons ice water
For the Apple Filling
6 apples, peeled and thinly sliced
½ cup brown sugar
¼ cup granulated sugar
1 teaspoon cinnamon
¼ teaspoon nutmeg
1 tablespoon lemon juice
2 tablespoons cornstarch
1 teaspoon vanilla extract
2 tablespoons butter
For Brushing
1 egg yolk
1 tablespoon milk
Extra sugar for sprinkling
Instructions
Prepare the crust:
In a large bowl, mix flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together. Divide into two discs, wrap, and chill for 30 minutes.
Make the filling:
In another bowl, combine sliced apples, brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla. Toss until the apples are evenly coated.
Assemble the pie:
Roll out one dough disc and place it into a greased pie dish. Fill with the apple mixture and dot with butter. Roll out the second crust and place it on top. Seal the edges and cut small slits for steam.
Add the finishing touch:
Brush the top with egg yolk mixed with milk, then sprinkle with a little sugar for a beautiful golden finish.
Bake:
Bake at 180°C (350°F) for 45–55 minutes, or until the crust is golden brown and the filling is bubbling.
