Creamy Spinach & Cheese Stuffed Chicken Breasts
Juicy chicken breasts stuffed with creamy cheese and tender spinach, then smothered in a rich garlic parmesan sauce… this comforting dinner feels restaurant-worthy but is surprisingly easy to make at home! Perfect for cozy family meals or special occasions
Ingredients
For the Stuffed Chicken
4 thick boneless, skinless chicken breasts
200 g fresh spinach (or frozen spinach, well drained)
150 g cream cheese, softened
1 cup shredded mozzarella cheese
2 garlic cloves, minced
1 teaspoon Italian seasoning
Salt and black pepper, to taste
2 tablespoons olive oil
1 teaspoon paprika
For the Creamy Sauce
2 tablespoons butter
3 garlic cloves, minced
1 cup heavy cream
½ cup chicken broth
½ cup grated parmesan cheese
1 teaspoon Dijon mustard (optional)
Salt and pepper, to taste
Fresh parsley for garnish
Instructions
1. Prepare the Filling
In a skillet over medium heat, sauté the spinach with minced garlic for 2–3 minutes until wilted. Remove from heat and mix with cream cheese, mozzarella, Italian seasoning, salt, and pepper.
2. Stuff the Chicken
Using a sharp knife, carefully cut a pocket into each chicken breast without slicing all the way through. Fill each pocket generously with the spinach and cheese mixture. Secure with toothpicks if needed.
3. Season & Sear
Rub the chicken with olive oil, paprika, salt, and pepper. Heat a large skillet over medium-high heat and sear the chicken for 4–5 minutes per side until golden brown.
4. Make the Creamy Sauce
In the same skillet, melt the butter and sauté garlic until fragrant. Add chicken broth and heavy cream, stirring gently. Mix in parmesan cheese and Dijon mustard until smooth and creamy.
5. Finish Cooking
Return the chicken to the skillet and spoon sauce over the top. Cover and simmer for 10–15 minutes, or until the chicken is fully cooked and tender.
6. Serve
Garnish with fresh parsley and serve hot with mashed potatoes, pasta, rice, or roasted vegetables.
Serving Tip
For extra flavor, sprinkle a little more parmesan on top just before serving and pair it with warm crusty bread to soak up every drop of that creamy sauce!
