½ teaspoon kosher salt
4–6 fresh basil leaves
2 sprigs fresh thyme
1 sprig rosemary (optional)
1 teaspoon honey (optional, for a soft sweetness)
Instructions
Gently score tomatoes with an “X” at the base (optional for easier flavor absorption).
Place tomatoes and herbs in a clean mason jar.
In a bowl, combine Everclear, vinegar/lemon juice, salt, and honey.
Pour over the tomatoes, making sure they’re fully submerged.
