Ingredients

1 cup white rice (long-grain or medium-grain)

2 cups whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Optional Add-Ins

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup raisins

Lemon or orange zest

Step-by-Step Instructions

Step 1 — Cook the Rice

Rinse rice under cold water.

In saucepan, add rice + 2 cups water.

Bring to boil.

Reduce heat and simmer 15 minutes until tender.

Drain if needed.

Step 2 — Heat Milk Mixture

Add cooked rice back to pot.

Add milk + heavy cream.

Cook on low heat 10–15 minutes, stirring often.

Mixture should look creamy but not too thick.

Step 3 — Mix Eggs and Sugar

In bowl, whisk eggs + sugar.

Slowly add 1 ladle of hot rice mixture into eggs (mix fast).

This prevents eggs from scrambling.

Step 4 — Combine Everything

Pour egg mixture back into pot.

Cook on low heat 5–8 minutes.

Stir constantly until thick and creamy.

Add vanilla extract.

Add optional spices or raisins if using.

Serve:

Warm (very comforting)

Cold (thicker texture)
