Golden, buttery Texas toast stuffed with a rich, creamy seafood filling—loaded with tender shrimp, sweet crab, and plenty of melted cheese. These irresistible toast bombs are crispy on the outside, gooey on the inside, and perfect for appetizers, party platters, or an indulgent snack.

Ingredients

For the Filling

1 loaf Texas toast (about 8 thick slices)

1 cup cooked shrimp, finely chopped

1 cup lump crab meat, shredded and picked over for shells

8 ounces cream cheese, softened

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 teaspoon Old Bay seasoning

½ teaspoon paprika

¼ teaspoon black pepper

1 tablespoon lemon juice

For the Garlic Butter

½ cup unsalted butter, melted

3 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

¼ teaspoon salt

Instructions

Prepare the filling In a medium mixing bowl, combine the chopped shrimp, crab meat, softened cream cheese, mozzarella, Parmesan, minced garlic, parsley, Old Bay seasoning, paprika, black pepper, and lemon juice. Mix until smooth and well blended.

Prepare the bread Flatten each slice of Texas toast using a rolling pin. This makes the bread easier to fold and seal around the filling.

Fill and seal Spoon a generous amount of the seafood mixture into the center of each slice. Fold the bread over the filling, pressing the edges firmly to seal. Shape into a ball or a tightly sealed pocket.

Make the garlic butter In a small bowl, stir together the melted butter, minced garlic, parsley, and salt.

Brush and bake Place the toast bombs seam-side down on a parchment-lined baking sheet. Brush generously with the garlic butter mixture.

Bake to perfection Bake in a preheated oven at 375°F (190°C) for 15–18 minutes, or until golden brown and crispy on the outside.

Add the finishing touch For extra cheesiness, sprinkle a little additional mozzarella on top during the last 2 minutes of baking.
