Instructions
In a large mixing bowl, whisk together the flour and salt.
Add the eggs and gradually whisk in the milk and water until the batter is smooth and lump-free.
Stir in the melted butter, and add sugar and vanilla if making sweet crêpes.
Let the batter rest for 15–20 minutes for the best texture.
Heat a lightly buttered non-stick skillet over medium heat.
Pour about ¼ cup of batter into the pan and immediately swirl it around to coat the surface evenly.
Cook for 1–2 minutes until the edges begin to lift and the bottom is lightly golden.
Flip carefully and cook for another 30–60 seconds.
Transfer to a plate and repeat with the remaining batter.
