Ingredients

For the Roast:

2–3 lb (900 g–1.3 kg) beef chuck roast or brisket

1 tbsp salt

1 tsp freshly ground black pepper

4 garlic cloves, minced

1 large onion, sliced

1 cup beef broth

2 tbsp Worcestershire sauce

1 tsp dried rosemary

1 tsp dried thyme

2 tbsp butter

Optional for Extra Flavor:

3 carrots, cut into chunks

4 small potatoes, halved

1 cup mushrooms

 

 

 

Instructions

Season & Sear

Pat the beef roast dry and season generously with salt and pepper. Heat a large skillet over medium-high heat and sear the roast for about 3–4 minutes per side until a deep golden crust forms.

Build the Flavor Base

Place the sliced onions and garlic in the bottom of your slow cooker or roasting dish. Add the beef broth, Worcestershire sauce, rosemary, thyme, and butter. If using vegetables, add them around the roast.

Slow Cook to Perfection

Place the seared roast on top of the onions and broth mixture.

Slow Cooker: Cook on LOW for 8–10 hours or HIGH for 5–6 hours.

Oven Method: Cover tightly and bake at 325°F (165°C) for 3–4 hours, or until fork-tender.

Make the Gravy

Remove the roast and let it rest for 10 minutes. Strain the cooking liquid if desired, then simmer it in a saucepan for a few minutes. For a thicker gravy, whisk in 1 tablespoon cornstarch mixed with 2 tablespoons cold water.
