These buttery, pillowy-soft Milk Brioche Rolls are rich, tender, and perfectly golden. Made with simple ingredients and a touch of sweetness, they’re ideal for breakfast, dinner, sandwiches, or enjoying warm with a little butter and jam. Every bite is light, fluffy, and irresistibly delicious!
Ingredients
4 cups all-purpose flour
2 large eggs, room temperature
1 cup whole milk, warmed to about 110°F (43°C)
2¼ teaspoons active dry yeast (1 packet)
¼ cup granulated sugar
1 teaspoon salt
¼ cup unsalted butter, softened
1 egg yolk + 1 tablespoon milk (for egg wash)
Instructions
In a large bowl, combine the warm milk, yeast, and sugar. Let sit for 5–10 minutes until foamy.
Add the eggs and mix well. Gradually stir in the flour and salt until a shaggy dough forms.
Add the softened butter and knead for 8–10 minutes, or until the dough becomes smooth and elastic.
Transfer the dough to a lightly greased bowl, cover, and let rise in a warm place for 1–1½ hours, or until doubled in size.
Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball.
Arrange the dough balls in a greased baking dish or on a lined baking sheet, leaving a little space between them.
Cover and let rise again for 30–45 minutes, until puffy.
Preheat the oven to 350°F (175°C).
Brush the tops with the egg wash for a beautiful golden finish.
Bake for 20–25 minutes, or until the rolls are golden brown and cooked through.
Remove from the oven and brush with a little melted butter for extra softness and shine.
