Prep Time: 25 minutes
Cook Time: 35 minutes
Total Time: 1 hour
Servings: 4–6
Ingredients
For the Crispy Fried Chicken:
4–6 chicken drumsticks or thighs
1 cup buttermilk
1 cup all-purpose flour
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp cayenne pepper (optional)
Vegetable oil, for frying
For the Creamy Mac & Cheese:
8 oz (225 g) elbow macaroni
2 tbsp butter
2 tbsp all-purpose flour
1½ cups whole milk
½ cup heavy cream (optional, for extra richness)
2 cups shredded sharp cheddar cheese
½ cup mozzarella cheese
¼ tsp garlic powder
Salt and black pepper, to taste
Chopped fresh parsley, for garnish (optional)
Instructions
1. Marinate the Chicken
Place the chicken in a bowl and pour the buttermilk over it. Cover and let it marinate for at least 20 minutes, or refrigerate for up to 4 hours for even juicier chicken.
2. Prepare the Coating
In a shallow bowl, combine the flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper. Remove the chicken from the buttermilk, allowing the excess to drip off, then coat each piece thoroughly in the seasoned flour.
3. Fry Until Crispy
Heat about 1 inch of vegetable oil in a deep skillet to 350°F (175°C). Fry the chicken in batches for 12–15 minutes, turning occasionally, until beautifully golden brown and the internal temperature reaches 165°F (74°C). Transfer to a paper towel-lined plate.
4. Cook the Pasta
Boil the macaroni in salted water until al dente. Drain and set aside.
5. Make the Cheese Sauce
In the same pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk and heavy cream until smooth and slightly thickened.
Reduce the heat to low and stir in the cheddar and mozzarella cheeses until completely melted. Add the garlic powder, then season with salt and pepper to taste.
6. Finish the Mac & Cheese
Add the cooked macaroni to the cheese sauce and stir until every piece is coated in the creamy, cheesy goodness.
Serving Suggestions
Serve the crispy fried chicken over a generous helping of creamy mac and cheese with coleslaw, biscuits, cornbread, or steamed vegetables for the ultimate comfort food feast.
Tips
Marinate the chicken longer for maximum tenderness.
Double-coat the chicken for an extra crispy crust.
Freshly grated cheese melts smoother than pre-shredded cheese.
Add a dash of hot sauce or smoked paprika to the cheese sauce for extra flavor.
Enjoy every crispy, cheesy, comforting bite
