Ingredients

2–3 jalapeños, sliced
1 (12-ounce) can diced tomatoes
1 tablespoon ground cumin
1 tablespoon chili powder
2 teaspoons ancho chile powder
2 cups beef stock
1 teaspoon kosher salt, or to taste
½ teaspoon freshly ground black pepper
Instructions
Preheat your oven to 325°F (165°C).
Pat the roast dry with paper towels, then season generously on all sides with salt and black pepper.
Heat the olive oil in a large Dutch oven over medium-high heat. Once hot, sear the roast for about 4 minutes per side, until deeply browned and caramelized. This step builds incredible flavor.
Remove the pot from the heat. Arrange the bell peppers, onion, garlic, bay leaves, and jalapeños around the roast.
Pour in the diced tomatoes and beef stock. Sprinkle the cumin, chili powder, and ancho chile powder evenly over the top.
