Ingredients

2 pounds boneless, skinless chicken breasts

1½ cups apricot preserves

1 packet (1 ounce) dry onion soup mix

 

 

 

 

Directions

Prepare the slow cooker

Place the chicken breasts in an even layer on the bottom of the slow cooker. Slight overlapping is fine, but avoid stacking them too high so they cook evenly.

Make the sauce

In a small bowl, mix the apricot preserves with the dry onion soup mix until mostly combined. The mixture will be thick and slightly chunky.

Coat the chicken

Pour the apricot mixture evenly over the chicken breasts. Use a spoon or spatula to spread it so the chicken is mostly covered.

Cook

Cook on LOW for 4–5 hours, or

Cook on HIGH for 2½–3 hours

The chicken is ready when it’s fully cooked and easily shreds or slices with a fork. As it cooks, the sauce will thin slightly and mix with the chicken juices.

Adjust the sauce (optional)

Taste the sauce and adjust if needed:

Add a pinch of salt if needed.

Add a small splash of water if you want a thinner sauce.

For a thicker glaze, switch the slow cooker to WARM, crack the lid slightly, and let it sit 10–15 minutes.

 

 

 

 

Serve

Serve the chicken whole or shredded, spooning plenty of the sweet-savory sauce over the top.

¼ cup Dijon mustard
