Slow Cooker 3-Ingredient Amish Apricot Chicken

Prep Time
5 minutes
Cook Time
2½–5 hours
Ingredients
2 pounds boneless, skinless chicken breasts
1½ cups apricot preserves
1 packet (1 ounce) dry onion soup mix
Directions
Prepare the slow cooker
Place the chicken breasts in an even layer on the bottom of the slow cooker. Slight overlapping is fine, but avoid stacking them too high so they cook evenly.
Make the sauce
In a small bowl, mix the apricot preserves with the dry onion soup mix until mostly combined. The mixture will be thick and slightly chunky.
Coat the chicken
Pour the apricot mixture evenly over the chicken breasts. Use a spoon or spatula to spread it so the chicken is mostly covered.
Cook
Cook on LOW for 4–5 hours, or
Cook on HIGH for 2½–3 hours
The chicken is ready when it’s fully cooked and easily shreds or slices with a fork. As it cooks, the sauce will thin slightly and mix with the chicken juices.
Adjust the sauce (optional)
Taste the sauce and adjust if needed:
Add a pinch of salt if needed.
Add a small splash of water if you want a thinner sauce.
For a thicker glaze, switch the slow cooker to WARM, crack the lid slightly, and let it sit 10–15 minutes.
Serve
Serve the chicken whole or shredded, spooning plenty of the sweet-savory sauce over the top.
What to Serve With 🍽️
This dish pairs well with:
White rice
Buttered egg noodles
Mashed potatoes
Steamed green beans
Roasted broccoli
Simple green salad
Dinner rolls or crusty bread (great for soaking up the sauce)
Variations & Tips
Use chicken thighs
Replace the breasts with 2 pounds boneless, skinless chicken thighs for a richer flavor and extra-tender meat.
Add a little heat
Mix ¼–½ teaspoon crushed red pepper flakes into the sauce.
Make it less sweet
Replace ¼ cup of the apricot preserves with low-sodium chicken broth or water.
Tangy version
Use:
1¼ cups apricot preserves
¼ cup Dijon mustard
This creates a sweet-mustard glaze instead of the onion-soup flavor.
Lower sodium option
Use reduced-sodium onion soup mix and add salt only after tasting the finished dish.
Freezer Meal Tip
You can prepare this as a freezer meal:
Put raw chicken, apricot preserves, and onion soup mix into a large freezer bag.
Seal and freeze flat.
Thaw overnight in the refrigerator.
Dump everything into the slow cooker and cook as directed.
Leftover Idea
Shred the leftover chicken and:
Serve it over rice with vegetables for meal prep.
Put it inside pita bread or sandwiches for a quick lunch.
